I’m a little obsessed with zucchini lately. I do need to make some bread with the shredded zucchini in my freezer…but most of the things I’m into right now don’t work with frozen shreds. I’ve been doing Smitten Kitchen’s zucchini saute (couldn’t be easier and so delicious)…zucchini lasagna…putting it raw on salad (I really like the texture)…looking forward to zucchini pizza but we need fresh, good tomatoes for that, so it’ll be a little while longer.
SK’s zucchini bread pancakes are yummy, too. I like her cream cheese/syrup topping a whole lot.
@ Amy, great ideas with zucchini! I’ll have to try the saute version from SK. I have the SK zucchini pancakes pinned, but have not make them yet. Once we’re really in zucchini season I’ll have to try them!

your book sounds fascinating – will have to see if i can get it at the library.
I just made the pancakes this morning – we had zucchini to use up ๐ FYI, I use all white whole wheat flour (she says you can swap half). and I use the cream cheese topping recipe from her carrot cake pancakes (which are also delicious), but I use about 3T maple syrup instead of 1/4 c. powdered sugar. totally yummy and healthier than straight up syrup – but feels like such a treat, like you’re putting frosting on your pancakes! I’ve also tried her suggestion of maple syrup + plain yogurt, which is OK in a pinch, but not as good as the cream cheese.

I loved the book. It was the starter of many many conversations about ethics, race and inequality.I would have lived to discuss it during a book club.

Hurray! So glad you’re enjoying Henrietta! It was such an interesting book club discussion for us last year! We just read the Hobbit and are meeting next week. I’m not a sci/fi, fantasy kind of gal, so it was a stretch, but Tolkien is a master and there is nothing quite like a well-written book, regardless of the genre! I especially enjoyed his humor. ๐ Happy packing!
